Beat the dinner time rush
Dinner isn't always easy at my house. Sometimes, if I can, I like to take my time cooking a special meal. However with two children in extracurricular activities and locations that are sometimes 2 hours away, dinner has to be FAST!
One of my favorite ways to cut down on cooking time is to take some rice out of the freezer. That's right! You can freeze rice! On one of those slower evenings when you are cooking rice on the stove (or in your slow cooker while you are at work), cook extra. I like to cook enough for 3 meals - eat 1/3 at that meal, divide the rest into two and put in the freezer for later.
Small portions can be put in freezer bags. For our family I put a meal's worth in a Tupperware container, one that is made to go from the freezer to the microwave. My old ones were called Rock'n Serve. Tupperware now has newer version called Vent'n Serve. I love these containers! And they are guaranteed for life! It's hard to get better than that.
When I am in a hurry and balancing a meal I can quickly grab one of these out of the freezer and heat it in the microwave. Voila! No thawing, serves right from the container, no pot to clean, and time saved equals a happy mom.
